Job Description - Executive Chef
Quentin's F&B (S) Pte Ltd We are seeking an experienced and highly motivated
Executive Chef
to lead the culinary operations of our Eurasian restaurants and catering division. The ideal candidate will oversee all kitchen functions, menu development, food quality, staff training, and operational efficiency across our outlets. Key Responsibilities
Culinary & Kitchen Operations Lead, supervise, and manage daily kitchen operations across all outlets.
Ensure all dishes meet company standards for taste, presentation, and consistency.
Oversee food preparation, cooking, and plating, including special events and catering.
Develop and implement kitchen SOPs, recipes, and portion control standards.
Maintain hygiene and sanitation standards in accordance with SFA & NEA regulations.
Menu Development
Create and innovate new menu items while maintaining the identity of Eurasian cuisine.
Plan seasonal menus, festive menus, and special event menus.
Monitor food trends, costs, and customer feedback to continually refine offerings.
Staff Management
Recruit, train, supervise, and evaluate kitchen staff.
Prepare staff schedules and ensure adequate manpower for operations.
Lead by example in maintaining discipline, teamwork, and high culinary standards.
Cost Control & Purchasing
Manage kitchen budgets including food cost, labour cost, and wastage control.
Work closely with suppliers for purchasing, negotiating prices, and ensuring quality.
Conduct monthly stock takes and inventory management.
Quality Assurance
Oversee quality of raw ingredients and finished dishes.
Ensure compliance with food safety and hygiene audits.
Resolve customer complaints related to food quality promptly and professionally.
Event & Catering Support
Plan and lead the culinary execution of corporate events, weddings, and catering functions.
Coordinate menu customization for dietary restrictions and special requirements.
Job Requirements
Minimum
5-8 years
of experience in a professional kitchen, including leadership roles.
Strong background in Asian or Eurasian cuisine preferred (but not required).
Proven experience in menu development, cost control, and kitchen management.
Ability to lead and motivate a team in a fast-paced environment.
Strong organisational, communication, and problem-solving skills.
Knowledge of food safety regulations and kitchen hygiene standards.
Willing to work on weekends, public holidays, and split shifts as required.
